Okay friends, it's officially summer, and that means that here in Ontario we finally have some beautiful florals to work with right in our backyards!
We are super fortunate to have a sprawling Apothecary Rose Bush in our garden. Our roses are full of aroma and rich with skin healing properties, so naturally we centred our early summer distillation around them.
If you don't have access to a rose bush, many plants can be used in botanical honey glycerites. Some make amazing skincare honeys (our favourite). Many plants can also be used in honey alone to make delicious culinary honeys.

Botanical Honeys & Glycerites
The combination of Honey & Glycerin is very easy to work with and yields a beautiful and useful product. Honey itself is an irreplaceable skincare ingredient, so infusing it with botanicals just makes it all the more helpful for your skin. Glycerin is a nice, gentle alternative to alcohol as an extracting menstruum and also helps to preserve the product. Glycerin makes honey slightly more viscous and less sticky, for easier application.
The Plant Material
Rose, Roman and German Chamomile, Yarrow, Lavender, Orange Blossom, Blue Tansy, Helichrysum, Geranium Rose leaf and flower, Violet leaf and flower
Lavender, Thyme, Licorice Root, Lemon Verbena, Lemon Balm, Peppermint, Coriander, Ginger Root, Fennel, Rosemary, Basil (Cardamon Pods, Cinnamon, Whole Black Pepper, Clove, Vanilla Bean and Star Anise make great additions to fresh herb and flower honeys)
Fresh or Dry Plant Material - as much as you can get your hands on! *when working with fresh plant material, your final product should be refrigerated
Clean and prepare your flowers, fresh herbs or fruit.
Place all ingredients in a widemouthed glass jar.
Combine 50% glycerine and 50% honey and pour over herbs until completely immersed and covered by about an inch of liquid.
Cover the jar and store in the fridge.
Shake daily for 4-5 days.
Strain well with a strainer covered with a muslin cloth.
Bottle and label your beautiful botanical honey.
*To make culinary honeys simply use 100% honey, no glycerine
